I hardly know where to start! Thank You! The sessions have truly been amazing and I’ve learned so much. I always considered myself to be healthy, even though I was overweight, with limited energy and a really high cholesterol level of 322. I was however never motivated to do much to become healthier. Through our sessions you have opened my eyes to a healthy lifestyle. I now have an amazing portfolio of resources and recipes. I’ve learned so much about whole foods, fat and sugar– things I didn’t truly understand before! Your handouts are great reference tools that I go to often. My husband had just been diagnosed as being “greatly overweight:” plus he has rheumatoid arthritis. So we decided to take this adventure together. Now, we shop and cook together and are enjoying our healthy eating. We are walking together, exercising and even doing some yoga together in the evenings. This is huge for us!!
Eileen, your encouragement is an amazing benefit. You’re always gentle, never overbearing, just guiding and teaching us. You are a great motivator!
Now let me tell you some of our results. We have each lost weight, Rich has lost 20 lbs, I’ve lost 30. Our habits are changing. We look forward to mealtime, and eating beautiful, colorful healthy food. I am down to a size 2. After a recent blood test my total cholesterol level is now 160! I was also taking a medication from my doctor, but even he was blown away with the improvement in only 6 weeks. I am now going off the medication and continuing with healthy eating and daily moving. In past years I’ve had problems with depression, especially in winter months, but I have not had the “blues” at all and have so much energy, I look forward to getting outside and walking every chance I get. I couldn’t be happier with my body or my life! Thank You!

In the seven months I’ve been going to see Eileen I have lost 65 pounds. Through Eileen’s expertise, encouragement, and support I’ve learned that the path to a healthy lifestyle and reaching my health goals doesn’t have to be a difficult one. That both can be attained by making healthy choices, taking it one step at a time and acknowledging and appreciating “small victories,” as an example when I started going to Eileen I was unable to tie my shoe without losing my breath and I could barely walk a mile. Now, I’m tying my shoes just fine. In fact I have completed several 5Ks, a 10K, a biathlon, and have signed up to run a marathon next year!
She has taught me to ask myself “What Am I Hungry For?” By asking myself this question I have become more in tune with my body, that sometimes my cravings are not for food, but for physical activity, relaxation or even companionship just to name a few.
I still have health goals I want to reach and I know I’ll be able to by applying what I’ve learned in my meetings with Eileen.

Before I met Eileen I didn’t realize it but I had many issues in my life that I needed to confront/address. My job, my personal life, and health issues were causing me a great deal of stress. I wasn’t sleeping well at night. I was eating a lot of the wrong foods and was struggling with heart burn daily. I had been to Weight Watchers and over about a year and a half had lost 35 pounds. After gaining back 20 pounds, one of my greatest fears was that I would gain back all of the weight I had lost. This was another source of stress for me.
I needed to do something to keep myself motivated. I happened to find Eileen on the internet sort of by chance (but I believe nothing is truly by chance) and was encouraged by what I read about her. I e-mailed her and after some communication back and forth I made the decision to choose Eileen to be my personal nutritional counselor.
After my first session, I knew I had made a good decision. I jumped right in to the 21 day sugar cleanse and lost 8-1/2 pounds quickly. I was amazed at how much better I felt in such a short period of time simply by eating less sugar.
I have a goal to lose 10 more pounds. I am confident that those 10 pounds will come off and that they are insignificant in comparison to what I have gained from my sessions with Eileen. By changing my diet (less sugar and caffeine), I no longer suffer from daily heart burn. I now sleep very comfortably at night and feel much more relaxed and energized during the day. It’s amazing how a simple change in my diet can have such a positive outcome. I am working to incorporate some fun into my life on a weekly basis.
I can honestly say the past 5 months have been a positive growing experience for me. I have learned a lot about myself and the way I want to live. Overall I am feeling like I have much more control over my life.
I highly recommend Eileen as a nutritional and (whether she realizes it or not) spiritual counselor. She is compassionate, supportive, positive, and most of all a great listener. I am very grateful to her for all she has taught me. Thanks Eileen. I will miss our sessions.

From my peek weight I have lost 54 pounds. I credit most of that to my change in diet and the fact that I am now moving five to six days a week. That inspiration has come primarily through Eileen. I can stand for several hours at a time now. I can take stairs. I make conscious decisions to throw my clothing on the floor so I have to pick it up, because I know I can. I pick moving over television (sometimes). I was your typical skeptic. I no longer am that way. By choice, I have become a mover. I have become a label reader. I have become the director of what happens to and in my body. Much thanks and appreciation for the blessing that you are in my life. I speak in confidence that I will meet and see my grandchildren graduate. Bless you.

Wow – where do I begin. Taking steps toward a healthy body in your 50′s is such a challenge and trying to do it alone is even tougher. Seeking assistance from experts in nutrition and the dynamics of the female body chemistry is the best way to navigate through your mind and body health journey.
It was refreshing to hear about your wholistic approach with health and nutrition since most of the of the time I have to drive to St. Louis to find someone with your expertise and holistic beliefs. Please do not move to the other side!!!
I knew my body had been abused by my intake of all the fat, sugars and carbs during the holidays and I needed to take action fast. I had already started working out again with a vengeance and needed more. Your suggestion of a sugar detox was the perfect solution. It was surprising to learn what products contain sugar, which ones are bad, how much we consume and what it does to your skin and metabolism.
The results after 21 days astonished me. I have had people saying how nice my skin looks – and my sagging skin in the neck has disappeared – a BIG issue as we age. The 5% loss in body fat was great to hear as well. I am going to continue monitoring my sugar intake and look forward to even better results.
My only wish is that I had done this 20 years earlier.
